better example of a version-detection script. I made a few small changes to the script: shortening long lines and removing some non-functional ones. See http://seclists.org/nmap-dev/2008/q4/0311.html.
Here is some documentation for Nmap, but these files are much less comprehensive than what you'll find at the actual Nmap documentation site ( http://nmap.org ).
